  • Pimento Cheese

    Does anyone have a T&T pimento cheese recipe? I remember watching my mother making it many moons ago, but at that time cheese wouldn't dare cross my lips I know velvetta, pimentos, hellmans, s&p... but what else. It seems like I remember dry mustard ?????

    I know this sounds different from other recipes (it's not actually a recipe) but this is one passed down in my family:

    1 8 oz pkg cream cheese
    1/4 c Hellman's mayo (none other)
    3 or 4 jalapeno slices
    1-2 tbsp sweet pickle relish
    dash of liquid smoke
    1/4 cup finely shredded cheddar cheese.
    Medium jar of pimentos (drained)
    I put everything in the food processor and pulse then add pimentos last.

      Nommie, thank you for sharing. Your recipe sounds delicious. I like the idea of the jalapenos I just got a bunsh of roasted Hatch peppers this past weekend .... that might be good I think I'm going to give it a try. I'll let you know Thanks again! Beth

        Bacon is also very good in Pimento & Cheese..

          Homemade Pimento Cheese
          1/2 cup vinegar
          1/2 cup water
          1/2 cup sugar
          1 tablespoon flour
          dash salt
          1 beaten egg
          Mix all ingredients ,keep stirring and boil for 10 minutes
          then add
          2 lbs finely shredded cheese
          2-6oz jars pimentoes
          add chopped pickle if desired
          stir well and refrigerate at least 2 hours

            I love the grated onion flavor in this. I also love the creamyness of it.

            Pimento Cheese

            1/2-3/4 package cream cheese, room temp.
            1 1/2 cups grated sharp cheddar
            1 cup grated Monterey Jack
            1/2 cup mayonnaise
            1/2 teaspoon salt
            2 to 3 tablespoons pimentos, smashed (one really small jar)
            1 Tablespoon grated onion
            pepper

            Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and hand mix until well blended.

              OMG--I left out the sweet pickle relish!!-I usually add about a tbsp. I edited to add it.
