I'll admit, I use the box, but I do LOVE mashed potatoes that have either bacon, the skins or shredded cheddar cheese in them. There are so many variations!!

I too always made my mashed potatoes from scratch but last year I experienced Simply Potatoes mashed potatoes. They taste every bit as good as my home made ones and certainly are significantly less work. Just add butter and sprinkle the top with a little paprika and serve. I hope you like them.

I make mine with skim milk and butter, but I especially like them made with the skins on and using yukon gold potatoes. They are creamy and rich on their own and don't need much help.A man of words and not of deeds, is like a garden full of weeds.

If using redskins leave half the skins on - after cooking drain, mash with warm milk and butter. When I feel like something fancier - I mix in sour cream, cream cheese - dried chives, and garlic when mashing then place 1/2 in casserole dish sprinkle with cooked & crumbled bacon and shredded cheddar cheese repeat layers. Bake in oven for about 20 minutes at 350 - Its twice baked in a casserole.

I also do the redskins and boil them with skin on.
In a bowl melt butter, cheese, minced garlic, and blend up with potatoes and add sour cream. When I'm finished I garnish top of potatoes with cheese and bacon and chives. Looks and taste amazing. Actually I don't measure it I just add as much of each item as I like.

I peel mine, but DS wants me to leave it on, but I know my Dad would have a fit. For turkey day and also other celebrations I have at my house, after I make my potatoes, I put them in my buttered crock pot to keep warm, that way I don't have something else to do at the last minute.
