Here is a recipe for pineapple salsa I made a few weeks ago:
Pineapple salsa
1 15 oz can pineapple tidbits drained
2 tomatos chopped
1 can rotel chopped tomatoes and green chilis
2 tbs garlic
Mix alltogether and simmer on stove for 20 minutes. Pour into steralized jars, or in plastic container.

Yes it can sit on the shelf after it is canned. I took this into work, and they were saying it would be good on chicken. We ate it with chips tho. We didn't bring a chicken to work.
