  • Crock Pot Chicken THIGHS and Rice?

    Hello,
    I just bought 2 huge packages of chicken thighs and I'd love to make some of them tonight. Our ac is out so it's much too hot to use the oven. I love using my crock pot and we love chicken and rice. The only recipes I can find for the crock pot that call for chicken and rice, require boneless, skinless chicken breasts. I'm afraid to use thighs in these recipes because they exude so much more liquid than the breasts and that would affect the rice. It might be too much liquid. I have a great chicken thighs and rice casserole that bakes in the oven, but I don't know what to do to adapt it for the crock pot. Anyway, I'm wondering if any of you might have a crock pot chicken thighs with rice recipe that you've tried and would be willing to share? I would really appreciate it!!

    General Oven to Crockpot Cooking Time Conversions
    Oven Crockpot
    15 to 30 minutes 1-1/2 to 2-1/2 hours on HIGH
    or 4 to 6 hours on LOW
    35 to 45 minutes 2 to 3 hours on HIGH
    or 6 to 8 hours on LOW
    50 minutes to 3 hours 4 to 5 hours on HIGH
    or 8 to 18 hours on LOW
    Note: Most uncooked meat and vegetable combinations will require at least 8 hours on LOW.

      a crockpot is hot too.

      don't overcook as the chicken tends to m elt in there. more than 4 hours might be too much
      I don't want buns of steel. I want buns of cinnamon !!!

          Your post made my mouth water for one of my fav crock pot recipes that uses chicken thighs


          Crock-pot Thai Chicken thighs (served over rice)
          1 teaspoon ground ginger
          1/2 teaspoon salt
          1/4 teaspoon ground red pepper
          6 bone-in chicken thighs (about 2-1/4 pounds), skin removed
          1 medium onion, chopped
          3 cloves garlic, minced
          1/3 cup canned coconut milk
          1/4 cup peanut butter
          2 tablespoons soy sauce
          1 tablespoon cornstarch
          2 tablespoons water

          3 cups hot cooked couscous or yellow rice

          1/4cup chopped cilantro (optionL

          Lime wedges (optional)

          Preparation:
          1.
          Combine ginger, salt and red pepper; sprinkle over meaty sides of chicken. Place onion and garlic in slow cooker; top with chicken. Whisk together coconut milk, peanut butter and soy sauce; pour over chicken. Cover; cook on LOW 6 to 7 hours or on HIGH 3 to 4 hours or until chicken is tender.

          2.
          With slotted spoon, transfer chicken to serving bowl; cover with foil to keep warm. Turn slow cooker to high. Combine cornstarch and water until smooth. Stir into slow cooker; cover and cook 15 minutes or until sauce is slightly thickened. Spoon sauce over chicken. Serve chicken over couscous; top with cilantro. Garnish with lime wedges.
