    Hi...
    I'm looking for a tried & easy recipe for Creamed Spinach, to serve as a side dish with steak.

    Any suggestion what other easy side to serve, I'll be camping in a camper I need something easy and fast, maybe something I can fix before I go camping, maybe just to warn up. Up to any suggestions....

      Creamed Spinach
      Recipe courtesy Tyler Florence
      Ingredients
      Extra-virgin olive oil
      1 tablespoon unsalted butter
      1 onion, minced
      2 garlic cloves, minced
      2 pounds fresh baby spinach, stemmed
      1/2 cup heavy cream
      1/2 teaspoon grated fresh nutmeg
      Sea salt and freshly ground black pepper

      Instructions
      Heat a large pot over medium heat. Drizzle with a

      2-count of oil, add the butter, and stir it around so it melts. Saute the onion
      and garlic until soft, about 5 minutes. Add the spinach in batches, pushing it
      down with a wooden spoon to help it wilt. Keep adding more spinach when there is
      room in the pot. Cook the spinach until it is dry, then lower the heat and add the
      cream and nutmeg. Stir and cook for 10 minutes. Season with salt and pepper and
      serve hot.

        From hsmom. I haven't tried it yet.

        Says serves 6 but between my daughter (17) & me, it only serves 2!!! We love it!

        Boston Market's Creamed Spinach


        Serves : 6

        3 tbsp. butter or margarine
        4 tbsp. flour
        tsp. salt
        1 cup whole milk

        2 tbsp. butter or margarine
        2 tbsp. minced onion

        cup water
        1/2 tsp. salt
        20 oz. frozen spinach - chopped

        C (or more) parmesan cheese. grated
        cup sour cream - lowfat okay



        Over med./low heat, melt butter in saucepan.
        Stir in flour & salt until creamed together.
        Stir in milk a little at a time.
        Increase to medium heat.
        Constantly stir with whisk until mixture becomes thick & smooth.
        Remove from heat & set aside.

        Place butter in 2 qt. saucepan over med. heat, add onions & cook until transparent.
        Add spinach & water to pan, lower heat & cover.
        Stir several times until spinach is almost completely cooked.
        When spinach is almost done, add white sauce & sour cream
        Stir well & simmer until completely blended.

            I haven't tried this yet. Got the stuff to do it this weekend. It's not creamed spinach, but a creamy spinach casserole. Pic. looks good. It's in this months TOH Healthy cooking mag. Looks like it would be easy to halve also.

            Creamy Spinach Casserole

            10 servings
            2 cans (10-3/4oz) reduced-fat reduced-sodium condensed cream of chicken soup,undiluted
            1 pkg (8oz) reduced-fat cream cheese, cubed
            1/2 cup fat-free milk
            1/2 cup grated parmesan cheese
            4 cups herb seasoned stuffing cubes
            2 pkgs (10oz ea) frozen chopped spinach, thawed and squeezed dry.

            1. In a large mixing bowl, beat the soup, cream cheese, milk and Parmesan cheese until blended. Stir in stuffing cubes and spinach.
            2. Spoon into a 2-qt. baking dish coated with cooking spray. bake, uncovered, at 350 for 35-40 minutes or until heated through.

            Nutrition Facts: 2/3 cup equals 205 caloris, 8g fat (4g sat. fat), 25mg cholesterol, 723mg sodium, 25g carbohydrate, 3g fiber, 9g protein.

            Prep: 10min
            bake: 35min
            Yield: 10 servings
