  • Cleaning out the freezer...ideas for ground beef and ham

    Ok, the freezer is packed and it doens't last forever in there. I have a TON of ham and frozen ground beef, any good easy ideas? We have kids so the kid-friendlier, the better!

    I'm being lazy by not posting several recipes here. Try going on the recipe archive under Main Dishes, then do a search for ham and ground beef or hamburger. Should be several you could use. Good Luck!

      I am from Hawaii and cook a bit of "local" foods. Here is one that we like, and it is easy and kid friendly too.

      Hawaiian Teriyaki Burger
      1 1/2 lb. ground beef
      1 small onion, chopped
      1 egg
      1/2 cup shoyu (soy sauce)
      1/4 cup sugar
      2 cloves garlic, minced
      1/2 tsp. minced fresh ginger
      2 stalks green onion, chopped
      1 Tbl. sesame oil (in the Oriental section of market)
      Combine all ingredients: mix well. Form into patties. Fry, grill or broil
      Serve with rice or on hamburger buns. Sometimes I use Kings Bread Buns.

        Slacey, off the top of my beaner, I'm thinking for-
        ground beef: meat balls: swedish or italian, stuffed peppers, spaghetti sauce (meat sauce), a homemade form of hamburger helper w/ pasta, tomato paste, ect., stuffed cabbage, chili, meat lasagna, burgers, can mix w/ ground lamb and make gyros, tacos or enchaladas (sp?).
        Ham: ham and eggs in a.m., deviled ham salad, slab-o-ham in southern style green beans w/red spuds, ham steaks, cubed ham w/ mac and cheese, ham sammies, ham and spuds hash, spinach and ham quiche, chicken breast stuffed w/ ham and cheese(my mind went blank on the name), ham and sausage jumbalaya.
        After that , I'll need to "put it in the cooker" and see what pops out. Thx, Laura.
        ps-----ladies, I KNOW you have more ideas than this!!!! Help, please?

              We liked China Pie!

              Ground beef sauted with onion
              corn, frozen
              mashed potatoes

              Layer ground beef
              sprinkle with Lawerys
              bake for 20 min or so at 350

              can top the taters with cheese if you like!

                Ground beef: Meatloaf, Meatballs -- for meatball sammies -- add a little sauce and melt some cheese on top or meatballs w/ spag., Spaghetti meat sauce, Hamburger BBQ (sloppy joes)

                Sloppy Joes
                1 pound lean ground beef
                1/4 cup chopped onion
                1/2 teaspoon garlic powder
                1 teaspoon prepared yellow mustard
                3/4 cup ketchup
                3 teaspoons brown sugar
                salt to taste
                ground black pepper to taste

                In a medium skillet over medium heat, brown the ground beef, onion, drain off liquids.
                Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
                ** Forgot to add, that the leftover Sloppy Joes are great mixed in w/ macaroni and cheese -- one dish meal!

                Ham: I love to chunk up ham and add to my scalloped potatoes or mac and cheese. Sometimes I throw in some steamed broccoli to the mac and dish meal. Here is my recipe for grilled ham slices. So easy and so girls loved it growing up!!! Dont let the horseradish scare you away!!! You wont even taste it!!!

                Grilled Ham Slices
                1 cup packed brown sugar
                1/4 cup lemon juice
                1/3 cup prepared horseradish
                2 slices ham

                Preheat an outdoor grill for high heat and lightly oil grate.
                In a small bowl, mix brown sugar, lemon juice and prepared horseradish.
                Heat the brown sugar mixture in the microwave on high heat 1 minute, or until warm.
                Score both sides of ham slices. Place on the prepared grill. Baste continuously with the brown sugar mixture while grilling. Grill 6 to 8 minutes per side, or to desired doneness.

                  Fry up some ham and have with biscuits for breakfast! Grilled ham

                  Meatloaf - tacos - taco salad - enchiladas - spaghetti with meat sauce - spaghetti with meatballs - lasanga - taco soup

                      HAM RECIPES

                      Crockpot Ham & Potatoes 6-8 slices ham
                      8-10 med. potatoes, peeled n sliced
                      1 med. onion, peeled and thinly sliced
                      Salt and pepper
                      1 c. grated Cheddar cheese
                      2 cans cream of celery or mushroom soup Paprika Put half of ham, potatoes and onions in crock pot. Sprinkle with salt and pepper, then grated cheese. Repeat with remaining half. Spoon undiluted soup over top. Sprinkle with paprika. Cover and cook on low 8-10 hours or on high 4 hours.

                      Country Ham and Cornbread Casserole 2 c Ham; cubed cooked ham, * see note
                      1/2 c Green onions; chopped
                      1/4 c Margarine or butter; melted
                      2 lg Eggs; beaten
                      1 cn (11 oz) corn w/red and green peppers; drained
                      1 cn (8.5 oz) cream style corn
                      1 c Martha white self-rising white cornmeal
                      3/4 c Buttermilk
                      4 oz (1 cup) shredded cheddar cheese Heat oven to 350 F Grease 12x8-inch (2 quart) baking dish. In large bowl, combine all ingredients except cheese. Pour into greased baking dish. Bake at 350 F for 45-55 minutes or until golden brown and set. Sprinkle with Cheese. Bake an additional 2-3 minutes or until cheese is melted. Let stand 5 minutes before serving. Cut into squares.

                      AJ's Festive Baked Ham
                      Preheat oven to 350 degrees. Place fully-cooked ham in large roaster. Score diagonally. Place whole cloves in each scored corner. Spread marmalade of choice (orange, pineapple, apricot) completely over ham. Top with brown sugar and a wee bit of cinnamon. Pour honey over ham, if desired. Cover with aluminum foil and bake for 1 hour. Remove foil after 1st half-hour of cooking. NOTE: Cherry marmalade is delicious, as well. When I really feel creative I spread chopped pecans over the ham.

                      HAM CASSEROLE, SOUTHERN STYLE
                      8 oz. Noodles
                      1 1/2 c. celery, chopped
                      1/2 c. green pepper, chopped
                      1/2 c. water
                      8 oz. cream cheese, softened
                      3/4 c. Parmesan cheese, grated
                      1 c. milk
                      1 garlic clove, crushed
                      2 c. ham, cooked and cubed
                      4 oz. mushroom pieces
                      1 1/2 t. butter or margarine
                      Cook and drain noodles. In a saucepan, cook celery and green pepper in water about 5 minutes; drain. In (2 quart) baking dish, mix cheese, milk and garlic til smooth. Gently stir in noodles, vegetables, cubed ham and mushrooms. Dot with butter, cover and bake at 350° for 35 minutes.(serves 4)

                      Pepsi Pork Roast 3-5 lb pork roast (what ever fits in crock pot)
                      1/4c Soy sauce more or less to taste
                      1/4c Worcestershire sauce more or less to taste
                      1 12oz. can diet cola
                      salt n pepper Rub roast with salt and pepper and place in crock pot, add liquid. Cook on high 2 1/2 -3 hours or low 4 hours or untill internal temp is 170. Remove done roast and add flour to remaining liquid a little at a time to make gravey. Add a package of frozen baby carrots or potato cubes about half way through the cooking time. This shift dinner goes together in about 10 minutes at lunch time. Plenty to feed the entire crew and then some.

                        GROUND BEEF RECIPES

                        SWEDISH MEATBALLS
                        1 lb. ground beef
                        6 slices whole wheat bread
                        1 egg, slightly beaten
                        1/2 tsp. sugar
                        1/2 tsp. allspice
                        1/2 tsp. nutmeg
                        1 tsp. salt
                        1 can Campbell's beef consommé
                        1 can Campbell's tomato soup
                        Mix together all of the above; shape lightly with your fingers into 1 inch balls. Brown on all sides in a lightly greased skillet. Heat 1 can of consommé and add cooked meatballs. Cover pot and cook over very low heat 1 1/2 hours. Add extra consommé or tomato sauce if desired or if meatballs seem to be sticking.

                        Sweet And Sour Meatballs ... Karen Shew
                        1 lb. pork sausage (ground)
                        1 lb. ground beef
                        2 eggs
                        3/4 C. bread crumbs
                        1/4 C. white wine
                        1/2 C. ketchup
                        1/4 C. soy sauce
                        2/3 C. brown sugar
                        Mix sausage, beef, eggs, and bread crumbs by kneading like bread dough. Shape into golf ball size balls and bake at 350* for 20 minutes. Drain excess grease. Combine wine, ketchup, soy sauce, and brown sugar. Simmer for 30 minutes and pour over meatballs. Delicious served over rice.

                        MEAT LOAF
                        1 (10 3/4 oz.) can Campbell's condensed tomato soup
                        2 lbs. ground beef
                        1 pouch Campbell's dry onion soup and recipe mix
                        1/2 c. fine dry bread crumbs
                        1/2 c. finely chopped celery
                        1 egg, beaten In large bowl, mix thoroughly 1/2 cup of tomato soup, beef, onion soup mix, bread crumbs, celery and egg. In 8x12 inch baking pan, firmly shape meat mixture into 8x4 inch loaf. Bake at 350 degrees for 1 1/4 hours or until done. Spoon off 2 tablespoons drippings; reserve. In saucepan over medium heat, heat remaining soup and reserved drippings to boiling, stirring occasionally. Spoon over meat loaf. Makes 8 servings.

                        Pizza Meatloaf
                        Ingredients for sauce:
                        1/2 cup chopped onion
                        1- 6 oz. can tomato paste
                        1/4 teaspoon salt
                        1 cup water
                        Ingredients for the loaf:
                        1 1/2 lbs. ground beef
                        1 cup soft bread crumbs
                        1 teaspoon salt
                        1 teaspoon oregano
                        1/4 teaspoon basil
                        1/4 teaspoon pepper
                        1/2 clove garlic, minced
                        1 egg, beaten
                        1 T Parmesan cheese
                        1 cup shredded mozzarella cheese
                        Combine the sauce ingredients in saucepan, cook over medium heat to boil, reduce heat, simmer 20 minutes. Combine the loaf ingredients, (except the mozzarella cheese) add 1/2 cup of the sauce ingredients and mix. Place in loaf pan and back at 375 for 1 hour after the hour, take out, pour over rest of sauce mixture and cheese bake and additional 10 minutes.

                        Pop-Over Pizza ... Gloria Schaffer.
                        1 lb. ground beef
                        1 large onion, chopped
                        1-1/2 oz. envelope spaghetti sauce mix
                        15 oz. can tomato sauce
                        1/2 C. water
                        8 oz. sliced Mozzarella
                        2 eggs
                        1 C. milk
                        1 T. vegetable oil
                        1 C. sifted flour
                        1/2 t. salt
                        1/2 C. grated Romano cheese
                        Grease a 13" x 9" x 2" baking dish. Brown beef with onion in large skillet, breaking up with spoon as it cooks. Spoon off excess fat. Stir in sauce mix, tomato sauce and water; simmer 10 minutes. Spoon into baking dish; top with cheese slices and place in oven to keep hot. Beat eggs, milk and oil until foamy. Beat in flour and salt until batter is smooth. Pour batter over hot meat filling, spreading to cover completely. Sprinkle with Ramano. Bake at 400* for 30 minutes, or until puffed and golden brown. Cut into squares.

                        FIVE-LAYER CASSEROLE
                        2 lbs. lean ground beef
                        1 can Campbell's Golden Mushroom soup
                        1 pkg. dry onion soup mix
                        1 pkg. mild Cheddar cheese (shredded)
                        1 pkg. tater tots
                        Break ground beef (uncooked) into pieces and place in a 4x9 baking dish. Spread mushroom soup over meat. Sprinkle onion soup mix over mushroom soup. Sprinkle Cheddar cheese over onion soup mix. Place tater tots over Cheddar cheese layer. Bake at 350 degrees for 1 hour.

                        SUPPER CASSEROLE
                        1 lb. ground chuck (OR ground beef)
                        1 lb. onion, finely chopped
                        1 lb. fresh carrots, pared and sliced
                        1 lb. green beans (fresh or frozen)
                        2 cans Campbell's cream of mushroom soup
                        1 (1 lb.) pkg. of med. egg noodles
                        Italian bread crumbs
                        1/4 c. melted margarine
                        Cook onion slowly with prepared ground chuck until onions are translucent. Add pepper (1/2 teaspoon or to taste). Separately cook carrots and green beans together until almost tender, reserve cooking water. Mix 2 cans of cream of mushroom soup with 1 1/2 cups of broth from the vegetables (add water if needed to measure 1 1/2 cups). Cook egg noodles separately according to package. Layer ingredients in a large casserole (13 x 9) beginning with meat, then vegetables, noodles and cover with half of soup. Next layer; meat, vegetables, and rest of soup, ending with plain noodles. For topping mix: 1 1/4 cups bread crumbs with melted margarine and sprinkle over top of noodles. Bake at 400 degrees for 20 minutes, watching so top does not brown too much.

                        GREEK CASSEROLE
                        6-8 med. potatoes
                        2 tbsp. butter
                        1 lg. can Campbell's tomato soup
                        Salt and pepper, to taste
                        2 lb. hamburger
                        1 onion
                        1/2 c. water Boil potatoes in skins until almost tender. Peel and slice. While potatoes are cooking, brown hamburger. Then drain hamburger and add butter and onion to hamburger and slightly brown onion. Add tomato soup and water to meat and simmer 5 minutes. Make white sauce: 2 c. milk 3 tbsp. butter 1/2 c. Velveeta cheese Melt butter in small saucepan then mix in flour gradually over low heat. After mixed well, slowly add milk while stirring. Cook until thick. Remove from fire and add cheese. Put into greased 13 x 9 pan as follows: layer of potatoes, meat, then sauce and repeat. Then last put all remaining sauce and top with cheese. Bake in preheated oven at 350 degrees until top lightly browned, approximately 35-40 minutes.

                        AMISH COUNTRY CASSEROLE 1 lb. beef chunks or ground beef
                        1 chopped onion
                        1 can tomato soup
                        1 lb. egg noodles
                        1 can cream of mushroom soup
                        1T olive oil
                        Saute chopped onion in olive oil. Add beef. Cook well. Add can of tomato soup undiluted. Cook egg noodles according to directions on package. Drain well. Add can of cream of mushroom soup, undiluted. Grease casserole dish. Place 1/2 of beef mixture in bottom of casserole. Add 1/2 of noodle mixture. Put rest of beef on noodles. Add remaining noodles. If desired, sprinkle paprika lightly over top of noodles. Bake in 375 degree oven for 20-25 minutes, or until bubbly.

                        Green Bean and Hamburger Casserole
                        2LB ground beef
                        4-1/2 slices bread
                        1c milk
                        1/4c celery
                        1/4c onion
                        1T Worcestershire sauce
                        Salt and pepper to taste
                        2 cans green beans, drained
                        2 cans cram of mushroom soup, undiluted
                        Soak bread in milk, then add to ground beef along with celery, onion, Worcestershire sauce, salt, and pepper. Shape into small balls. Bake in a 325 oven until brown; drain grease from meat balls. Combine meat balls and green beans in casserole dish and pour soup on top. Return to oven and bake at 300 for 1- 1-1/2 hr

                        Quick Cheeseburger Bake PREP: 12 min BAKE: 30 min Makes 8 to 10 servings 1 pound ground beef
                        3/4 cup chopped onion
                        1 can (11 oz) condensed Cheddar cheese soup
                        1 cup frozen mixed vegetables, if desired 1/4 cup milk
                        2 cups Bisquick Original baking mix
                        3/4 cup water
                        1 cup shredded Cheddar cheese (4 ounces)
                        Heat oven to 400 Generously grease rectangular baking dish, 13 x 9x2 inches. Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in soup, vegetables and milk. Stir baking mix and water in baking dish until moistened; spread evenly. Spread beef mixture over batter. Sprinkle with cheese. Bake 30 minutes.

                        Alabama Lasagna An Alabama Fire House Special By Bar Kirby One Onion
                        One Bell Pepper
                        Two Pounds of Ground Beef
                        Two Cans of BUSHS baked beans
                        Two Table Spoons of Brown Sugar
                        One 16oz Hunts Original Bar-B-Q One Bag of White Cheese (2 cups)
                        One Bag of Yellow Cheese (2 cups)
                        One Can of Flaky Grans Biscuits Chop the Onion and Bell Pepper in to large chunks. Place in skillet. Crumble Ground beef and brown. Drain. Then place the baked beans, brown sugar, and Bar-B-Q in a large pan. Bring to a Boil. Add Ground Beef Mixture. Bring to boil. Place mixture in baking pan. Place biscuits on top Place in Preheated oven (use the biscuits temp). About half the baking time of the biscuits, take out of oven and add cheese. bake till cheese is melted and a little brown.

                          SOME MORE. . . LOL! SORRY! Uhhhmmm - is there a limit? LOL! I don't post much, but when I do, I make up for it.

                          Potato Beef Casserole:
                          1 lb ground beef, browned and drained
                          3/4 c water
                          6 potatoes, peeled and thinly sliced
                          1 c frozen mixed veggies
                          1/2 cup mix
                          Combine all and simmer, covered, until potatoes are tender, about 30 minutes, stirring occasionally. Remove cover and cook until excess water is evaporated.

                          Beef Cabbage Casserole
                          1 lb Ground beef
                          1 Medium onion, chopped
                          1 cn (10 3/4 oz.) condensed Tomato soup
                          1 Soup can water
                          4 tb Rice
                          4 c Chopped cabbage Combine ground beef and onion in a skillet; cook until browned. Add tomato soup and water; bring to a boil. Add rice and mix well. Reduce heat and simmer for 3 minutes. Place cabbage in a large baking dish. Spread meat mixture evenly over cabbage. Bake, covered, at 350 degrees F. for 1 hour.

                          QUICK & EASY HAMBURGER MEAL
                          1 to 2 lbs. ground beef or chuck
                          1/4 c. of an onion, chopped
                          1 box of macaroni & cheese
                          1 can tomato soup In skillet brown ground beef with onion. Make macaroni and cheese as directed on box. Add tomato soup to browned meat. When all is done, add it all together. It is great served with cornbread.

                          Hamburger Noodle Bake The Linger In country kitchen was the hub of much activity. Here Grandmother Linger prepared food for her family as well as many guests. There was always the smell of home-baked goods and her great beef dishes. This noodle bake was especially a favorite
                          1LB ground beef
                          2 cans tomato sauce 1t salt
                          1t sugar 1 pk- med-sized noodles (8-10oz)
                          1 carton sour cream
                          1 pk cream cheese (3 ounces)
                          6 green onions - or 1 medium-sized onion, chopped 1c shredded cheese Simmer beef, tomato sauce, salt, and sugar 15min. Cook noodles. Mix sour cream, cream cheese, and onion together. In a 2qt baking dish, alternate twice in casserole -- first noodles, then onion mixture, then ground beef. Top with cheddar cheese and bake 25-30min at 350
