    I love the Queso that you get at El Chico mexican restaurant in Mckinney Texas. It would be awesom if anyone knows what they add to the cheese for this flavor. Its not like your typical queso with chunks of veggies and salsa in it. It is just a creamy cheese with seasoning.

    CHILE CON QUESO

    Yield: 1 1/4 cups

    1 cup asadero cheese; shredded*
    4 oz jalapenos, chopped; drained, or 4 oz poblanos, deveined & julienned
    1/4 cup half & half
    2 tbsp onion; finely chopped
    2 tsp cumin, ground
    1/2 tsp salt

    Heat all ingredients over low heat, stirring constantly,
    until the cheese is melted. Serve warm with tostaditas.

    (If this is made with julienned poblanos, it's called
    "queso con rajas de chile").

    WHITE QUESO DIP (MEXICAN STYLE)

    1 pound Land o Lakes White American (I got this in the deli..wasn't Land o Lakes...but it was White American)
    2 cans (4 oz each) small diced green chilis, undrained
    1/2 cup to 1 cup heavy cream (depending on thickness of dip you like)

    Simmer all on the stove in a saucepan until smooth.

    I used 1 cup of cream....this was gone ASAP at our house!

      1 brick of velveta
      2 cans rotel
      2 cloves garlic minced fine
      jalapanos to taste
      cilantro to taste
      and the secret creamy ingredient

      2 boxes of crumbled goat cheese like you find in your deli cheese dept for salads
      make sure you get the plain

      dump all into crock pot and enjoy!
