    I have a recipe to make ganache. It calls for 8 oz. bittersweet chocolate chopped into small pieces. I was wondering if I could use 8 oz. of dark chocolate chips instead? Can anyone answer this question?

    I've made ganache in the past, and yes, the dark chocolate chips will work just fine.

      Are the chocolate chips sweetened at all or are they bitter chocolate. If sweetened you might have to reduce the sugar in your recipe a little.
