  • Chilled soup recipes?

    Hey everyone... I am thinking of making some type of chilled soup in the next couple of days.. since its so hot here..

    I have made gazpacho a few times ; but am looking for something different.. maybe something with a little kick too it.. (spicey)
    I am not looking for recipe that has melon in it or stuff like that (sweeter)..
    any help would be great!! thanks...

    I love chilled soups, really good here in the summertime. One of my favorites is Mango--first had served on a cruise ship and became Larrys favorite so started making it for him. Another favorite is a chilled cucumber soup, another Larry favorite from cruises! I am not a big fan of cucumbers per se but LOVE the soup and actually often get cravings for it--even in the winter! There is also avocado and strawberry chilled soups too. And of course I love gazpacho the best!

      My companion would like the mango soup for sure!! I am not a mango fan at all.. I also like cucumber soup.. my fav is gazpacho with grilled shrimp and avocado on top.. with dollop of sour cream. YUMMMY!

        MWG that is a great addition to gaspacho. I have to try that. Cucumber soup interests me as well Joycer....if you could post the recipe.

          This is the recipe I have used for many years Most of the time now I just throw cucumber in food processor, add vanilla yogurt, garlic
          and dill, onion, some cream, mix and chill. Dont even bother to measure! I bought some freeze dried dill awhile back in the produce section (in jar) and I usually use that!

          CHILLED CUCUMBER SOUP---Larry’s favorite!!
          1 large cucumber
          1 small onion. fine diced
          1 garlic clove, crushed
          15 oz yogurt—natural
          2-3 tab cream
          1 tab red wine vinegar
          Salt & Pepper
          Put chunks, garlic and 1/3 yogurt in food processor. Blend,
          then add cream. Add vinegar and chill.
          **Larry likes it without chunks, so I drain before serving! I LIKE IT
          CHUNKY! I also add some dill, or dill dip!

          Here is also one from Velvet Turtle Restaurant ( are they still in business? Have never used this one!
          VELVET TURTLE CUCUMBER SOUP
          1 onion
          1 cp chopped leek(white part only)
          1 large cucumber-peel, seed and diced
          4 tab butter, divided
          salt and pepper to taste
          2 tab dry white wine
          2 cups water
          1 Ĺ teas chicken base
          2 tab flour
          Ĺ cup whipping cream
          ľ teas lemon juice
          5 drops hot pepper sauce
          dash chopped fresh dill
          Ĺ cup half and half
          sour cream—optional

          Saute onions, leeks and cucumber in 2 tab butter, salt
          and pepper. Add wine, water and chicken base, bring
          to boil. Melt 2 tab butter in small pan, blend in flour.
          Add to onion mix and simmer 1 hour. Process in food
          processor, using short blasts. Strain through sieve.
          Add cream, lemon juice, pepper sauce, dill and reserved
          cucumber. Cool. Add half and half if too thick. Chill-
          Serve in chilled bowls, top with sour cream, garnish
          with lemon and parsley.

            Hungarian Sour Cherry Soup

            Total Time: 30 minutes

            6 cups water
            1 pound fresh sour cherries, pitted
            3/4 cup sugar
            1 cup sour cream
            2 tablespoons flour
            1/4 teaspoon salt
            1 teaspoon confectioners' sugar

            In a large saucepan, cook cherries with water and 3/4 cup sugar until done, about 10 minutes.

            Meanwhile, in a medium bowl, mix sour cream with flour, salt and confectioners' sugar until smooth.

            When cherries are done, temper the sour cream mixture with a few ladles of hot cherry liquid, whisking until smooth. Transfer to the pan with the cherries and whisk until smooth. Simmer 5 minutes, but do not boil.

            Cool to room temperature in an ice water bath. Place plastic wrap directly on the surface of the soup (so a skin doesn't form) and refrigerate until cold. Serve cold as a first course as they do in Hungary or as a dessert with a dollop of sour cream or whipped cream.

              Here are two recipes we enjoy.

              Gazpacho

              2 1/2 c. spicy V-8 (or tomato juice)
              1 c. tomatoes, chopped
              1/2 c. celery, chopped
              1/2 c. cucumber, chopped
              1/2 c. green bell pepper, chopped (or 1/4 c. jalapeno)
              1/2 c. green onions, chopped
              3 T. white wine vinegar
              1 T. light olive oil
              1 clove garlic, pressed
              2 t. parsley, chopped
              3/4 t. Worcestershire sauce
              1/4 to 1/2 t. salt
              1/2 t. cracked black pepper
              *cucumber slices for garnish

              Mix ingredients well, cover and refrigerate overnight. Serve cold.

              *Garnish with cucumber slices, if desired.

              *I donít see the need to puree this soup.

              California Avocado Tortilla Soup

              3 cans chicken broth
              2 cans tomato soup
              1/2 bunch cilantro, leaves only
              3 cloves garlic, finely chopped
              1/2 teaspoon ground black pepper
              1 ripe California avocado, seeded, peeled and cubed (Reserve 8 cubes for garnish) (I use 2 avocado's)
              8 corn tortilla chips, crumbled

              In a large pan combine chicken broth, soup, cilantro, garlic, and pepper.
              Bring to a boil, decrease heat, and simmer for 10 minutes.
              Cool slightly, and puree in batches in a blender.
              Return to pan, add avocado cubes and heat through.
              Ladle into soup bowls and garnish with reserved avocado cubes and crumbled tortilla chips. Serve.
