  • Caesar salad dressing

I would like a simple caesar salad dressing recipe made without the raw egg and anchovies. Currently the recipe I use is:

    1/3 cup oil
    1 clove garlic, crushed
    2 tbsp cider vinegar
    1 tbsp lemon juice
    1/4 tsp salt
    1/4 tsp pepper
1/2 cup parmesan cheese (like the Kraft powder type)

this recipe is pretty good tho, would just like to try something slightly different.

Here is the one we really like (can't recall where I got it).

    Caesar Salad Dressing

    1 T. garlic, crushed
    1/2 c. Parmesan cheese
    1 c. mayo
    1 T. red wine vinegar
    1 T. lemon juice
    1/2 t. Dijon mustard
    1/4 t. pepper
    2 t. Worcestershire sauce
    1/2 c. light olive oil
    4 T. sour cream

Blend/whisk well. Will keep up to 2 weeks in the fridge. For best creaminess mix in a food processor.

I use the one from atkins, I love cesar and to me nothing has come close to this ever. I use anchovey paste, but I am sure you could leave that part out.

      2 tbsp. + 2 tsp. olive oil
      1/4 cup mayo
      3 anchovey fillets rinsed
      1 tsp. lemon juice
      1 tsp. worchestershire sauce
2 garlic cloves pressed through garlic press
      2 tbsp. parmesan cheese

Put all ingredients in blender and pulse until blended thoroughly. I usually double it, and definatly let it sit in the fridge awhile before you use it.

I have used the green can and shredded fresh, both work.
