There is no one that makes black beans from scratch?

      Re: Black Bean recipes

I use to cook beans from scratch, but couldn't see that much difference from canned. Here are my favorite tried and true recipes that use black beans.

      Refried Black Beans

This is really good and has a different, and I think
better taste than refried beans from pinto beans.

1 (15 oz) can black beans with liquid
1/2 cup red or green salsa (Pace, La Victoria, etc)
1/4 cup grated cheese (pepper jack, Velveeta, etc)
      1 tsp chili powder
      1 tsp dried onion flakes
      1/2 tsp granulated garlic
1/8 tsp salt (table, seasoning, smoked, etc)
      2 Tbsp salad oil
      1 Tbsp bacon bits

      2 Tbsp cold water
      1 Tbsp cornstarch

Add beans, salsa, cheese, chili powder, onion,
garlic, salt, oil and bacon bits to a saucepan.

      Heat and simmer 5-minutes.

Partially mash with fork or partially blend with a stick blender.

Mix cold water with cornstarch and add to refried beans.

Simmer for 2-minutes until liquid in beans thickens.

      Serve warm.

Balsamic Black Bean Salsa with Corn and Tomatoes

This is a really good salsa when served with taco chips, pita chips, Fritos, etc.

        15-oz can black beans
14-oz can whole kernel corn - drained
14-oz can diced tomatoes & green chilies - not drained
        1/4 cup salsa verde
        2 Tbsp olive oil
        2 Tbsp balsamic vinegar
        1 Tbsp lime juice
        1 green onion - chopped
1/4 cup fresh cilantro - finely chopped
        1 garlic clove - crushed
        1/2 tsp ground cumin
        1/4 tsp chili powder
        1/4 tsp salt

Combine all ingredients. Mix well. Place in fridge until chilled.
Serve with taco chips or serve as a side dish.

          Black and White Turkey Chili

This is really good with the mix of earthy flavored black beans and creamy white beans combined into a chili.
Adding a little dusting of chipotle chili powder to taste, if you like a little heat, really warms you up.

          2 Tbsp vegetable oil
          1 Tbsp olive oil
          1 cup yellow onions, diced
          1/2 cup bell peppers, diced

          1 pound ground turkey
          1 Tbsp garlic powder
          1 Tbsp chili powder
          1 Tbsp ground cumin
          1/2 tsp ground coriander
          1/2 tsp chrushed dried oregano
          1/4 tsp seasoning salt
          1/8 tsp ground black pepper

1 (14 ounce) can diced tomatoes - with liquid
1 (6 ounce) can tomato paste
          1/4 cup salsa verde
          1 beef bouillon cube
1 (15 ounce) can black beans - with liquid
1 (15 ounce) can great northern white beans- with liquid (any type of canned white beans will work)
          1 cup water

In a 3-quart saucepan, saute the onions and bell peppers in the cooking oils until the onions are golden brown.

Add ground turkey and seasonings, crumble turkey, mix well and saute until turkey is browned.

Add diced tomatoes, tomato paste, salsa verde, beef bouillon, two cans of beans and 1 cup of water to saucepan.

Mix well and simmer for about 20 to 30-minutes, stirring occasionally.

Hey Allie, I use dried black beans in recipes that call for canned sometimes, the taste is incomparable.

Here is one that is DHs favorite, reminds us of Key West.

*I add red bell pepper in place of the pimentos and add some chopped jalapenos! As noted below, I added the vinegar and tomato paste last.

            Cuban Black Beans

            1 pound black beans, washed
            1/4 cup olive oil
            1 large onion, chopped
1 medium green bell pepper, chopped
6 cloves garlic, peeled and minced
            5 cups water
1 (6 ounce) can tomato paste
1 (4 ounce) jar diced pimentos, drained
            1 tablespoon vinegar
            2 teaspoons salt
            1 teaspoon white sugar
            1 teaspoon black pepper

Place beans in a large saucepan with enough water to cover, and soak 8 hours, or overnight; drain.
Heat oil in a medium saucepan over medium heat, and saute onion, green bell pepper, and garlic until tender.
Into the onion mixture, stir the drained beans, water, tomato paste, pimentos, and vinegar. Season with salt, sugar, and pepper. Bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally, until beans are tender.

Source - AllRecipes - By: momtoellis "A Cuban lady down the street made these every Wednesday...wonderful stuff! She served the beans over a bowl of hot rice, and garnished them with salsa, a little sour cream, and shredded cheese. It was also good without the dairy products. Can substitute canned, rinsed beans to cut cooking time use less water."

**One important note: Cook the beans COMPLETELY before adding tomato paste or vinegar.
