This one was posted on the site a long time ago I cannot find it on here! I Googled for a recipe, but, I want the one that was on "this" site, because I know it was good and I trust it! It has Butterscotch Chips in it. DH has the bag on the counter waiting for me to make these..haha

Potato Chip Sugar Cookies by Buckwheat - this is the only recipe I could find for Potato Chip Cookies.

These are good & crunchy.
2 sticks unsalted butter
1/2 cup sugar
3/4 t. salt
2 t. vanilla
1/2 cup chopped pecans
1/2 cup crushed potato chips
2 cups all purpose flour
Set oven to 350 degrees
Mix flour, butter, sugar, vanilla & pecans together and mix well.
Add salt and chips.
Mix all together.
The dough will be sticky!
Roll into small balls and place on a cookie sheet.
DIp the bottom of a glass into butter, then into sugar, and press cookies down.
BAKE 8-10 minutes

It isn't mine, it was on the bag of butterscotch chips. I made them for my sister to take to work and now I get request for them! People love the sweet and salty mixture. Enjoy!
Ingredients
1 c packed brown sugar
1 c sugar
1 c butter
2 eggs
2 1/2 c all purpose flour
1 tsp baking soda
1 1/3 c butterscotch chips
2 c crushed potato chips
Directions
1. Preheat oven to 350 degrees F (180 degrees C).
2. Cream together sugars and butter.
3. Beat in eggs.
4. Add flour and baking soda, mix well.
5. Fold in butterscotch chips and potato chips.
6. Drop by tsp. on cookie sheet and bake for 8 to 10 minutes.
