  • Cream of Shrimp

    I have 3 cans of Cream of Shrimp. I don't remember why I bought them. Any s***estions
    on how to use them. Any Tried & True recipes would be appreciated.

    Ro Ro I have this one from a long time ago and it was darn good. This recipe won $5,000.00 in a microwave recipe contest. Serve with wild rice for a sensational dinner. Serves 4

    SHERRIED SHRIMP ROCKEFELLER

    2 pkgs frozen, chopped spinach (10 oz. ea)
    1 pound medium to large raw shrimp, peeled and deveined
    1 can cream of shrimp soup
    1 cup shredded sharp cheddar cheese
    2 Tbsp sherry
    2 med. slices of fresh bread
    3 Tbsp butter
    dash paprika to taste

    1. In a 10 inch square casserole (12x8x2 inches) place unwrapped frozen spinach. Microwave at defrost 5 minutes. Break up blocks. Microwave at high 3 to 4 minutes more, until completely thawed. Drain well, squeezing out as much juice as possible. Spread over bottom of casserole. Distrubute shrimp evenly over the spinach

    2. In a 1 qt glass measure stir together undiluted soup, cheese and sherry. Microwave at high for 4 minutes, stirring after 2 minutes, until the chees is milted. Set aside while preparing crumb topping

    3. Break bread in tiny bits or coarsely crumb in blender. Place in small glass bowl and add butter. Microwave at high for 1 minute, stirring after 30 seconds, until butter is distributed among crumbs.

    4. Pour hot sauce over the casserole and distribute the crumbs over the top. Sprinke with paprika if desired. Microwave of high 12 to 14 minutes, uncovered, rotating dish 1/2 turn after 5 minutes. Let stand covered 5 minutes before serving.

    Ro....to tell you the truth I think I would bake this dish in step 4 instead of microwaving. To me that's too long a time to microwave. I would rather put it in the oven where I can gauge the doneness of the shrimp while not overcooking it.

      Looks like a wonderful recipe. However, my picky husband will not eat cooked spinach....darn it! Thanks for sharing your recipe.

        Will he eat any other greens? collard greens, Turnip greens, Kale, Swiss chard, Mustard greens

        you could substitute them for the spinach.

          Maybe collards but not the others at all. Thanks for the s***estions on alternative greens.

            Paula Deen has a seafood lasagna recipe that calls for it. I made it years ago. it was pretty good.
