  • Rice-a-Roni Salad

    Does anyone know the recipe for this offhand????? I wanted to make this tomorrow and now cant get the recipe.
    Im pretty sure it was Rice-a-Roni cooked, with green onions, mayo, maybe water chestnuts????? What else?

    Rice A Roni™ Salad

    INGREDIENTS:
    1 (10.75 ounce) package chicken flavored rice mix (e.g. Rice A Roni)
    1 bunch green onions, chopped
    1 (8 ounce) can water chestnuts, drained and chopped
    1 cup chopped celery
    1 cup chopped cooked chicken breast meat
    1/2 cup mayonnaise
    1 dash Worcestershire sauce
    salt and pepper to taste

    DIRECTIONS:
    Prepare Rice A Roni ™ as directed on package and chill.
    To the cooked Rice A Roni ™ , add the green onions, water chestnuts, celery, chicken, mayonnaise, Worcestershire sauce and salt and pepper to taste. Mix well, chill and serve.

      Recipe

      1 6.9-ounce box chicken-flavored Rice-A-Roni
      2 to 4 green onions, chopped
      1/2 green pepper, chopped
      1 cup black olives, sliced
      1 8-ounce can sliced water chestnuts, drained
      2 cups cooked chicken, chopped
      1 8-ounce jar marinated artichoke hearts
      1/2 cup mayonnaise
      1 teaspoon curry powder
      Salt and pepper to taste
      Cook Rice-A-Roni according to package instructions. Drain artichokes, reserving marinade. Chop artichokes and combine with rice, onions, peppers, olives, chicken and water chestnuts. Mix together mayonnaise, curry powder and reserved marinade. Pour over rice mixture and stir until well mixed. Season to taste. Serve warm or cold.

      Tips From Our Test Kitchen: This salad makes a perfect light lunch or dinner. Use low-salt Rice-A-Roni and reduce olives if you’re watching your sodium. Substitute plain yogurt for mayonnaise to reduce calories.

        THANKS A MILLION Wobin!! It is the second recipe with the artichoke hearts that I was looking for!!! I forgot about those and the olives both! lol

              as a side note.. I have been copy & pasting them(recipes) to a word doc from the site and saving them that way. I didnt lose any of them from the old chat house.

                Lovemykids....wanted to say that you want to make this recipe the day before you plan on eating it. It tastes totally different the next day after all the flavors blend. I dont put chicken in mine, just the veggies.
