    I am looking for a recipe to copy a Bertolli's frozen meal that isn't available any longer...It contained linguini, zucchini, tomatoes, mozzarella and chicken

    Tomatoes, Pasta Linguini Cooked ( Wheat Durum Semolina,Water, Eggs Whole, Sunflower Oil, Salt ), Chicken Meat Roasted ( Chicken Breast Meat ), Cheese Mozzarella ( Milk Pasteurized Whole, Milk Non Fat, Cheese Cultures, Salt,Enzymes ), Zucchini, Water, Sunflower Oil, Salt, Basil,Dextrose, Soy Protein Isolated, Sodium Phosphate, Food Starch Modified, Onions Dried, Corn Starch, Carrageenan,Spices, Garlic Dried[/SIZE]



    Chicken & Linguine with Zucchini in Creamy Tomato Basil Sauce

    1 pound boneless, skinless chicken breasts, cut into bite-size piece
    2 tablespoons olive oil
    1 1/2 teaspoons salt, divided
    1/2 teaspoon pepper
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1 24-oz jar prepared spaghetti sauce
    1 3/4 cups water
    8 ounces uncooked linguine
    1 small zucchini zoodles or thin slices
    1/3 cup heavy cream or 2 oz cream cheese at room temperature
    2 tablespoons fresh basil, chopped (or 1 teaspoon dried)
    1/2 cup shredded mozzarella cheese

    1-Add chicken, olive oil, 3/4 teaspoon salt, pepper and garlic and onion to a medium bowl and toss to coat chicken evenly with oil and seasonings.
    2-Heat a 12-14” skillet over medium-high heat. Add more oil if needed. Add half of chicken to skillet and brown on all sides (do not worry if chicken is cooked through, it will continue cooking in sauce later). Remove chicken from skillet and set aside. Cook the remaining chicken pieces the same way and also set aside. Cook the chicken in two batches to ensure it browns nicely. If you crowd the pan, the chicken will boil, not brown.
    3-Remove chicken, add zucchini and saute lightly.
    4-Leave zucchini in pan. Add spaghetti sauce, water, remaining 3/4 teaspoon of salt and uncooked pasta (break pasta in ˝). Bring skillet to a boil, stirring continuously to ensure the pasta doesn’t clump together.
    5-Reduce heat to medium-low, cover and cook* for 12-14 minutes, or until pasta is al dente; stirring occasionally.
    6-Add cream/or cream cheese and basil, increase temperature to medium and bring skillet to a simmer.
    7-Simmer, uncovered, for a few minutes or until sauce has started to thicken. Add chicken, stir. Top with shredded mozzarella, when melted, remove from heat and serve.

    *You may have to add a few tablespoons of water to your skillet if the pasta soaks up all of the sauce. Variances in spaghetti sauces yield variances in this step of the recipe.
