Traditional Key Lime Pie
4 eggs separate the yolks and whites
1 can (14 0z)sweetened condensed milk
1/2 cup key lime juice
Beat 4 egg yolks in medium bowl until
lemon yellow and creamy
Stir in sweetened condensed milk
and add the key lime juice
Pour into baked pie shell
Beat egg whites with 1/2 teaspoon
cream of tarter until soft peaks form
Gradually add 1/3 cup of sugar beating
until stif peaks form. Spread meringue
on top of pie sealing edges to crust
Bake 12 to 15 minutes at 325 and meringue
peaks brown
You can skip the meringue and do
whip cream

Some coconut flavor, which I love, without the actual coconut. A great pie!
Sittin' on a Sandbar Key Lime Pie
CRUST
2 cups crushed vanilla wafers
2 Tbs granulated sugar
5 Tbs melted butter
FILLING
8 oz Philadelphia Cream Cheese, softened (I used low-fat)
2 whole eggs
2 egg yolks
15 ounce can sweetened condensed milk
¾ cup Coco Lopez (Cream of Coconut) In the liquor aisle with the mixers
¾ cup key lime juice (I buy the Nellie and Joe's key lime juice rather than squeezing all those tiny key limes)
WHIPPED CREAM LAYER (I usually skip this)
1 cup heavy whipping cream
1 cup powdered sugar
In a bowl, combine vanilla wafer crumbs, sugar and melted butter. Press into a 9- inch deep dish pie plate. Bake at 350 degrees for 10 minutes. Allow to cool to the touch before filling.
In a medium bowl, beat cream cheese until smooth. Add eggs & egg yolks, one at a time, beating well after each addition. Add condensed milk and beat well. Add key lime juice and Coco Lopez and beat well. Pour into crust. Bake at 325 degrees for 30 minutes or until center is set to the touch. Allow to cool before refrigerating.
In a cold bowl, beat whipping cream and powdered sugar until stiff. Pipe large rosettes around edges.
