Garlic Expressions...If you haven't tried this simple dressing you're missing out. It;s a family favorite so we go thru a lot of it but is rather expensive ($4-$5/12oz) which is what led me to begin this quest. While its pretty popular I was disappointed that I couldn't find much in the way of a clone recipe.
Original Ingredients:
Cider Vinegar, Canola Oil, Cane Sugar, Garlic Cloves, Salt, Spices and Xanthan Gum
-only seven ingredients, should be simple, right?

So, I've been at this about a month. I make one recipe per week. I've been making half batches which result in about 12oz which is the size of the original bottle.
While the above dressings are decent they just aren't close enough to the original.You have to have a bottle of the original to compare, it just seems a bit sweeter, smoother, less acidic?
I'm convinced the key is in the brand of cider vinegar but I'm not sure which brand is used. In viewing a video on Garlic Expressions website the owner/founder says the vinegar is made using Northern Spy apples by a company in the Georgian Ba area. HOWEVER, I have not been able to find a company using this search criteria online(yet).
I've begun experimenting with ways to mellow out the vinegar taste such as diluting with water or making it less acidic with a pinch of baking soda but again, these items are not listed in the original ingredients so?? I'm thinking maybe the cider vinegar recipe may just be specially formulated for this company so it could come diluted from the manufacturer who produces it for Garlic Expressions (to their requested specs).
I'm not much of a social media guy so I thought a forum like this may be my best bet in getting some help nailing this recipe down. It may be much easier for folks here who have experience copying recipes and have a more refined pallet than I do.
Sorry for the long post, I just wanted you all to know that I've put some effort into this already myself, I'm not just looking for someone to do the work for me. I am enjoying the process actually, just need some other "Foodies" to bounce things off of/experiment with.
