I haven't tried this but a friend says it's her favorite way to make squash.
Rice Krispie Squash
6 cups diced butternut squash
1/4 cup butter
1/4 cup brown sugar
1/2 cup milk
2 eggs
salt and pepper to taste
Topping:
1/2 cup Rice Krispies
1/4 cup brown sugar
1/4 cup pecans or walnuts chopped
2 Tbsp melted butter
Cook squash in a small amount of salted boiling water until tender.Drain well.Add butter and sugar,mash together well.Beat milk and eggs together.Add to squash mixture and mix well.Season with salt and pepper.
Tranfer to a 11x7 baking dish.Bake at 350 for 45 mins.
Topping:
In a small bowl mix together rice krispies,sugar,pecans or walnuts and butter.Sprinkle over squash and continue to cook an additional 15 mins or until squash is firm and topping is bubbly.
