Found this one in my Betty Crocker Special Edition of The Big Red Cookbook.
Banana Cake
2 1/2 cups all purpose flour
1 1/2 cups mashed ripe bananas (3 med.)
1 1/4 cups sugar
1/2 cup butter, softened
1/2 cup buttermilk
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
2 large eggs
2/3 cup chopped nuts
Heat oven to 350. Grease bottom and sides of rectangular pan or 2 round pans with shortening and lightly flour.
Beat all ingredients except the nuts in a large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Stir in the nuts. Pour into prepared pans.
Bake rectangle pan for 45 to 50 minutes.
Round pans for 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool rectangle pan on wire rack. Cool round pans 10 minutes, remove cake to wire rack and cool completely. Frost with Buttercream frosting.
(I noticed it doesn't have vanilla...I would add a teaspoon full.)
