    4 eggs
    1 1/2 C. oil
    2 C. flour
    2 C. sugar
    2 tsp. baking soda
    2 tsp. baking powder
    2 tsp. ground cinnamon
    1/4 tsp. salt
    3 C. grated carrots
    1 1/2 C. coarsely chopped, walnuts or pecans

    Cream cheese icing:

    16 oz. powdered sugar
    8 oz. cream cheese, softened
    1/2 C. butter, softened
    1 tsp. vanilla
    Combine ingredients in a medium bowl & beat until smooth.

    Preheat oven to 350. Grease & flour a 13X9" baking pan. Beat eggs & oil together in a small bowl. Combine flour, sugar, baking soda, baking powder, cinnamon & salt in a large bowl add egg mixture & mix well.
    Stir in carrots & nuts. Pour into prepared pan & bake 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack & frost with cream cheese icing.
