Mexican Manicotti
1/2 pound hamburger
l cup refried beans
l tsp dried oregano
l/2 tsp cumin
8 manicotti shells or more if needed
l l/2 c. water
8 oz. picante or taco sauce
8 oz. carton sour cream
l/4 c. chopped green onion (opt)
l/4 c. sliced ripe olives
l/2 c. monteray jack cheese shredded
Combine meat with beans & oregano, cumin & mix well. Fill uncooked manicotti shells with uncooked meat mixture. Arrange in 10x13 baking dish.
Combine water, picante sauce; pour over manicotti shells. Cover with VENTED plastic wrap. Microwave on Hi for 10 minutes giving the dish a half turn once at 5 min. Using tongs, turn the shells over. Microwave on medium for 17-19 minutes until pasta is tender, giving the dish another l/2 turn about halfway thru last cooking time.
Combine sour cream, gr. onions & olives. Spoon down the center of the casserole & top with grated cheese. Microwave uncovered on HI for 2-3 more minutes until cheese melts.
