Pollo Borracho
1/2 c. golden raisins
1/2 c. warm dry sherry
1/2 c. flour
salt to taste
ground white pepper, to taste
4 pounds of chicken, cut into large pieces
1/2 c. vegetable oil
1 white onion sliced
4 minced garlic cloves
1/2 c. blanched whole almonds
1/2 c. green olives with pimentos.
1 tbs. cornstarch
1 cup white vinegar
1 3/4 c. chicken stock
1 c. good tequila
1 tbs sugar
Soak raisins in sherry for at least 30 minutes.
Mix the flour, salt, and pepper. Coat chicken with flour mixture. Warm frying pan over medium heat. Fry chicken for about 10 minutes--it will not be cooked through. Saute onion and garlic in small amount of leftover chicken juices. Add almonds, olives, raisins and sherry. Stir occassionally while simmering and let entire mixture meld flavors. Dissolve corn starch in remaining chicken stock and add to pan.
Add tequila to pan. Add 1/3 cup vinegar to pan. Taste. Continue to add vinegar to taste.
Bring to boil. Reduce heat and simmer until thick. Pour sauce over chicken and bake through.
