I don't know where I got this from, if it was on T&T or if I even got it from here, but the post on recipe requests had me digging in my squash recipes and this one sounds really good.
Nutty Zucchini Salad
4 strips bacon, finely chopped
1 lb. zucchini
salt
1 tablespoon toasted sesame seeds
1 teaspoon lemon juice
1/3 cup Vinaigrette Dressing (see below)
Cook bacon in a frying pan until crisp. Drain on absorbent paper and set aside. Wipe zucchinis with a damp kitchen towel and cut into fine strips. Place on a large plate and sprinkle lightly with salt and let stand for 10 minutes. Drain away excess moisture and place zucchini in a salad bowl. Add sesame seeds, lemon juice and vinaigrette dressing. Toss. Sprinkle with bacon and serve.
Vinaigrette Dressing:
2 tablespoons vinegar
1/2 teaspoon dry mustard
1/4 teaspoon salt
Freshly ground black pepper
6 tablespoons olive oil
Whisk vinegar in a small bowl with mustard, salt and pepper. contine whisking while you slowly add oil.
Makes about 3/4 cup.
