Quick and easy, got from another recipe board, looks good to me!
Chicken Quesadillas & Fiesta Rice
1 pound skinless, boneless chicken breast, cubed
1 10-3/4 oz can of condensed cheddar soup
1/2 cup thick and chunky salsa or picante sauce
10 8-inch flour tortillas
In medium skillet saute chicken over medium heat for 5 minutes
or until no longer pink and juices evaporate, stirring often. Add soup
and salsa. Heat to a boil, stirring occasionally.
Place tortillas on 2 baking sheets. Top half of each with about 1/3 cup of mixture. Spread to within 1/2 inch of edge. Moisten edges of tortilla with water, fold and press edges together. Bake for 5 minutes or until hot.
Fiesta Rice
1 10-3/4 oz can of condensed chicken broth
1/2 cup water
1/2 cup thick and chunky salsa or picante sauce
2 cups uncooked minute rice
Combine broth, water and salsa in a medium saucepan and bring to a boil.
Add rice, stir and remove from heat. Cover and let stand 5 minutes
