Holiday Mexican Spread

1 (8-oz.) pkg. cream cheese, softened
8 oz. (2 cups) shredded colby cheese
1 (4.5-oz.) can chopped green chiles, drained
1/2 cup sliced green onions
2/3 cup chopped red bell pepper
1/2 cup sour cream

1. In large bowl, combine cream cheese and colby cheese, blend well. Stir in chiles, green onions and 1/2 cup of the bell pepper.

2. Place mixture on sheet of plstic wrap. Shape into 12-inch log. Blend upper third of log to form candy cane shape. With plastic wrap, transfer to serving plate; reshape if necessary. Cover, refrigerate at least 1 hour before serving.

3. To serve, spread candy cane with sour cream. Sprinkle remaining 1/2 cup bell pepper in stripes to resemble candy cane; sprinkle wtripes with parsley. Serve with assorted crackers.
