Easy Pumpkin Bars
2 cups sugar
1/2 cup oil
16 ounce can pumpkin
4 eggs beaten
2 cups Bisquick
2 teaspoons cinnamon
1/2 cup raisins, optional
Grease jelly roll pan. Beat sugar, oil pumpkin and eggs for 1 minute. Stir in Bisquick, cinnamon and raisins. Pour into pan and bake at 350 for 30 minutes or until toothpick comes out clean in center. Cool, then frost and refrigerate.
Cream Cheese Frosting
3 ounces cream cheese, softened
1 Tablespoon milk
1/3 cup butter, softened
1 teaspoon vanilla
2 cups powdered sugar
Beat cream cheese, milk, butter and vanilla until creamy, then add powdered sugar. Spread on pumpkin bars.
