Shrimp and Pineapple Kabobs
12 (4-6-inch) wooden or bamboo skewers
1/2 cup purchased sweet-and-sour sauce
1/2 teaspoon dry mustard
2 tsp.s chopped fresh chives or 1 teaspoon freeze-dried chopped chives
2 medium green bell peppers, cut into 24 (1-inch) pieces
24 (1-to 1 1/2-inch) chunks fresh pineapple
12 uncooked medium shrimp, shelled, deveined
1. Soak skewers in water for 15 minutes. Meanwhile, in small bowl, combine sweet-and-sour sauce, mustard and chives; mix well.
2. On each skewer thread 1 pepper piece, 1 pineapple chunk, 1 shrimp, 1 pineapple chunk and 1 pepper piece. Place kibobs on broiler pan. Brush kabobs with sweet-and-sour mixture.
3. Broil 4 to 6 inches from heat for 3 minutes. Turn kabobs, brush with remaining mixture. Broil an additional 2 to 5 minutes or until shrimp turn pink.
