Garlicky Chili Con Carne
4 lbs. ground beef
4 tsp. salt
1 tsp. pepper
1 tsp. canola oil
6 cloves garlic, minced
2 large onions, chopped
2 green peppers, chopped
2 cans (14.5-oz each) diced tomatoes
1 can (6-oz) tomato paste
1/4 cup chili powder
1 Tbsp. ground cumin
2 cans (15-1/4-oz each) kidney beans, rinsed, drain
Cooked rice, sour cream, chopped jalapeno, pepper and fresh cilantro, optional.
Heat large pot over medium high heat; add beef, in batches if necessary. Stir in 2 tsp. salt and 1/3 tsp. pepper; cook stirring occasionally, until browned. Remove from pot. Drain; reserve.
Reduce heat to medium, In same pot heat oil; add garlic. Cook 30 seconds. Add onions and green peppers; cook, stirring often, until softened, 7 minutes.
Add 5 cups water, tomatoes with juice, tomato paste, chili powder, cumin, meat and remaining salt and pepper. Increase heat; bring to boil. Reduce heat. Simmer, stirring occasionally, 45 minutes. Add beans; cook 15 minutes. Serve with rice, sour cream, jalapeno and cilantro, if desired.
