I was thinking last night that this would make a delicious appetizer type sandwich. Using the small cocktail sandwich loaves that you can ussually find in the deli section. Cut the sandwich in a triangle and there ya go

I just saw this on her site the other day and it caught my eye as well. She has some killer recipes!

I just picked up some tomatoes yesterday, they say we are safe here.

Bean, I made the sandwich yesterday............ delicious! Be sure to slice your tomatoes thin and let them sit on a paper towel for a few minutes. I use my small George Foreman Grill and it came out similar to a panini... I use the light rye bread and it was delicious. Even though I don't usually use rye, the bread really made the sandwich I'll be anxious to hear your thoughts after you try it. Beth
