Apricot-Glazed Sweet Potatoes
3 lbs. sweet potatoes, cooked, peeled and sliced
1 cup brown sugar
5 teaspoons cornstarch
1/4 teaspoon salt
1/8 teaspoon cinnamon
1 cup apricot nectar
1/2 cup hot water
2 teaspoons grated orange peel
2 teaspoons butter
1/2 cup chopped pecans
Place sweet potatoes in a greased 13-in x 9-in-x 2-in. baking dish and set aside. In a saucepan, combine brown sugar, cornstarch, salt and cinnamon; stir in apricot nectar, water and orange peel. Bring to a boil, stirring constantly. Cook and stir for 2 minutes. Remove from heat; stir in butter and pecans. Pour over sweet potatoes. Bake, uncovered, at 350 for 20 to 25 minutes or until heated through.
