  • Upside-down Strawberry Shortcake

    This is great for the 4th of July. Not too sweet even though there are marshmallows in it. The cake and whipped cream cut the sweetness. Try it and let me know what you think.


    UPSIDE-DOWN STRAWBERRY SHORTCAKE

    1 cup miniature marshmallows
    1 package frozen sweetened sliced strawberries
    1 package strawberry jell-o
    cup shortening
    1- cups sugar
    3 eggs
    1 tsp. vanilla
    2- cups flour
    3 tsp. baking powder
    tsp. salt
    1 cup milk

    Sprinkle marshmallows in bottom of 9x13 pan; set aside.

    In a bowl, combine strawberries and jell-o.

    In a mixing bowl combine shortening and sugar. Add eggs one at a time beating well after each addition. Add vanilla. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Pour batter over marshmallows. Spoon strawberries mixture over batter.

    Bake at 350 for 45-50 minutes. Be careful not to burn the top. Cool on wire rack. Cut into squares. Serve with fresh whipped cream.
