Cranberry-Glazed Appetizer Meatballs
MEATBALLS:
1 1/2 lbs. lean groud beef
1/2 cup finely chopped onion
1/2 cup unseasoned dry bread crumbs
1/2 tsp. salt
1/8 tsp. pepper
2 eggs, slightly beaten
SAUCE:
1 (12-oz.) bottle (1 1/2 cups) chili sauce
1 (8-oz.) can (about 1 cup) jellied cranberry sauce
1. Heat oven to 375. In large bowl, combine all meatball ingredients; mix well. Shape into 60 (1-inch) balls; place in ungreased 25x10x1-inch baking pan.
2. Bake at 375 for 25 to 30 minutes or until meatballs are throughly cooked and no longer pink in center.
3. Meanwhile, in large saucepan, combine sauce ingredients; blend well. Bring to a boil over medium heat. Reduce heat to low; simmer 5 minutes, stirring occasionally.
4. Add meatballs to sauce; stir to coat. Cook over medium heat for 5 minutes or until thoroughly heated, stirring occasionally.
