From Reiman board--these sound really good!
gaudrey's Filled Cupcakes
3 eggs, beaten
2 cups sour cream
1 box cake mix, any flavor
1 cup mascarpone cheese (or 8 ounces cream cheese) softened
1/3 cup sugar
Pinch of salt
1 additional egg
6 ounces baking chips, any flavor
Combine the 3 eggs and sour cream until smooth. Add dry cake mix and blend on low speed until moistened. Beat 3 minutes on medium speed. Fill greased, sprayed, or lined cupcake pans 2/3 full of batter. Blend mascarpone cheese, sugar, salt, and the additional egg until smooth. Fold in baking chips. Put 1 rounded teaspoon of filling into the center of each cupcake. Don't press down. The filling will sink during baking. Bake as directed for cupcakes on the cake mix package. Cool in the pans for 10 minutes. Remove to racks to complete cooling. May serve warm or cool. If you wish, ice them with purchased icing, but they are good plain.
VARIATION: If desired, other fillings may be substituted: 1 caramel in each cupcake or a piece of candy about the same size - not over one inch square, a Rollo candy, a teaspoon of M&Ms, any flavor of baking chips, etc. You may cut the bite-sized pieces of Milky Way, Snickers, etc. in half and use 1 half in each cupcake. Jam, especially homemade, may be used too. Just drop in 1 rounded teaspoon. Raspberry is excellent with chocolate cupcakes. Nuts also may be used, if desired. Sprinkle 1 teaspoon finely chopped pecans, walnuts, or almonds on top of the batter before baking.
