  • Toffee Bars with a Shortbread Base (from Land O'Lakes)

    Toffee Bars

    1 c. firmly packed brown sugar
    1 c. (2 sticks) Land O' Lakes margarine, softened
    1 egg yolk
    2 c. all-purpose flour
    1/2 c. milk chocolate or real semi-sweet chocolate chips
    1/2 c. milk chocolate English toffee bits (may substitute 1.4 oz. milk chocolate English toffee candy bar, crushed...aka Heath bar)

    Heat oven to 325 degrees. Combine brown sugar, margarine and egg yolk in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour. Beat until well mixed.

    Press mixture evenly onto bottom of greased 15x10x1" jelly roll pan. Bake for 22-25 minutes or until lightly browned. (Bars will be soft).

    Sprinkle immediately with chocolate chips; let stand 3 minutes. Swirl chips slightly with table knife or back of spoon. Sprinkle with toffee bits. Cut into bars with sharp knife while warm.

    Makes 48 bars.
