Broccoli pasta

Ingredients:
· 2 bunches of fresh broccoli or 1 pkg. frozen broccoli
· 3-4 green onions chopped use green part as well
· 3-4 tbsp. olive oil
· 1 box of bowtie pasta or any other short pasta
· 1/2 cup (divided) pecorino romano or parmesan cheese
·
· salt & pepper

Directions:
Cut broccoli into small florets, discarding the stem. Rinse and place in strainer to drain. Heat olive oil in a pot large enough to hold the pasta. Add chopped green onions and cook for about 2-3 minutes until onions are softened. Add broccoli florets to the onion with about 1/2 cup water. Season with salt and pepper. Cover and cook on low heat for approximately 15 minutes or until broccoli is tender. Cook pasta in another pot until al dente. Strain pasta, add to broccoli mixture. Stir in grated cheese and mix well. Serve with the additional 1/4 cup of cheese.
