  • Onions Stuffed w/Meat

    Onions Stuffed w/Meat:
    Serves 4

    4 large sweet onions,peeled
    1/2 lb.ground beef or chicken
    4 T.grated Parmesan cheese(not the stuff in the green can)
    2 cloves garlic,crushed
    a sprig or 2 of oregano or marjoram,finely chopped
    1/4 c.finely chopped parsley
    2 T.tomato paste
    salt & pepper to taste
    1 egg
    olive oil

    Boil onions whole for about 35 minutes,till tender.When they've cooled a little,cut in half horizontally & remove the centers,leaving a shell of about 3 layers & patching any holes with a piece of onion.

    Mix the meat(if its not already ground you can chop it in a food processor)with the cheese,garlic,herbs,tomato paste,a little salt & pepper & the egg,work well till smooth.Fill the onions with this mixture,arrange them in an oiled baking dish,brush the tops with oil & bake @ 400 degrees for 40-50 minutes.Serve hot.
