Potatoes w/hot pepper:
Serves 4
2 large potatoes
salt
2 cloves garlic,crushed
1 small hot chili pepper,finely chopped, or 1/8 tsp.ground hot red pepper
4 T.olive oil
2 T.finely chopped parsley
Boil the potatoes in their skins in salted water.When cooked,let cool a bit,then peel & slice them.Fry the garlic with the chili pepper or ground hot red pepper in 1 1/2 T.olive oil till the garlic is light golden brown.Remove from heat,stir in the rest of the oil & mix with the potatoes.Sprinkle with salt & parsley & serve cold.
