    Eggplant Balls:

    I havent tried this recipe yet,but intend to soon.


    Olive oil
    3 garic cloves,minced
    1 large eggplant
    1 Tbls.water
    1 c.seasoned bread crumbs
    1/2 c.fresh parsley,chopped
    2 eggs,beaten
    1/2 c.Parmesan cheese


    Peel & dice eggplant.In a large saucepan,heat oil & gently saute garlic til golden.Add eggplant,the Tbls.of water & cover.Reduce heat & gently steam til eggplant is very soft.

    In a mixing bowl,combine eggplant & the last 4 ingredients.Mix well & let stand 20 minutes.Form into balls & fry on all sides in olive oil or place balls on a greased baking sheet & bake in oven 30 minutes @ 325 degrees.

    Serve with Marinara sauce in place of meatballs or sprinkle with more cheese & use for sandwiches.
