My grandmother used to make this when I was a kid. I think she made this to use up the veg that was going to go bad. It was really good. I do not have her original recipe but this looks like its close to it.
Fried Celery
Origin: Italian
Ingredients:
1 medium bunch celery
1 1/2 cups bread crumbs
2 Tbsp. parsley, chopped
0 salt/pepper
2 eggs
6 Tbsp. grated cheese
1 garlic clove, minced
COLAVITA extra virgin olive oil
Preparation:
Seperate celery stalks, scrub with a brush. Trim off root and
any blemishes, remove strings. If too wide, cut in half and
then into 3" pieces. Cook celery in boiling salted water,
covered for 15 minutes or until tender. Drain. In a shallow
bowl, beat eggs, add garlic. In another bowl, combine bread
crumbs, cheese, parsley, salt and pepper. Dip celery pieces
in egg and dredge in bread crumb mixture. Heat olive oil in
large skillet and saute celery pieces over low flame until
golden brown on both sides. Add more olive oil if needed.
Drain on absorbent paper. Serves 5-6.
