    Fudgy Chocolate Quick Bread

    4 squares Unsweetened Baking Chocolate

    1/2 cup (1 stick) butter or margarine

    1 cup granulated sugar

    1 cup firmly packed brown sugar

    2 eggs

    1 cup Sour Cream

    1 tsp. vanilla

    1-1/2 cups flour

    2 tsp. Baking Powder

    1/4 tsp. baking soda

    1 cup finely chopped toasted Walnuts

    PREHEAT oven to 350F. Grease and flour 9x5-inch loaf pan. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add sugars; mix well. Blend in eggs, sour cream and vanilla. Add flour, baking powder and baking soda; mix well. Stir in walnuts.
    SPREAD into prepared pan.
    BAKE 1 hour to 1 hour 10 min. or until toothpick inserted in center comes out clean. Cool in pan 10 min.; remove from pan to wire rack. Cool completely. Cut into 16 slices to serve.
    Banana Pineapple Muffins for Two
    l/4 cup oleo melted
    l/4 cup sugar
    l/2 large egg, or one small
    l/4 cup crushed pineapple (drained)
    l/2 cup mashed banana
    l/2 tsp vanilla extract
    l/2 cup all purpose flour
    l/4 cup whole wheat flour
    l/2 tsp baking soda
    l/4 tsp baking powder
    l/4 tsp each nutmeg and cinnamon

    1. Mix first six ingredients in bowl.
    2. Mix dry ingredients in another bowl.
    3. Add the wet ingredients to the dry. Stir to just mix, do no overmix. Fill nearly full in pam sprayed muffin tin or paper lined muffin cups. Bake 375 degrees about 20 minutes, or until done. makes 6 or 7. I sometimes toss in some raisins too.


    Banana and Mango Bread
    This recipe makes two loaves. The mixture of banana and mango really is a nice change over basic banana bread recipes (and I am a big banana bread fan).

    1 c Butter
    1 1/4 c Packed Brown Sugar
    3 Eggs
    3 C Self-raising flour
    1/2 ts Salt
    1/2 ts Cinnamon
    1/4 ts Grated Fresh Nutmeg
    1 1/2 c Mashed Ripe Bananas
    1 Small Ripe Mango, peeled and pureed
    1 c Golden Raisins
    1/2 c Chopped Walnuts

    In a bowl, cream the butter with sugar until fluffy; beat in eggs, one at a time, until incorporated
    In another bowl, combine self-raising flour with salt, cinnamon and nutmeg
    Combine mashed bananas with mango puree
    Mix the dry ingredients and banana mixture, alternately, into the creamed mixture until batter is just combined; fold in raisins and nuts
    Pour batter into 2 greased 8 1/2 by 4 1/2 inch loaf pans
    Bake at 350 degrees for 50 - 60 minutes or until toothpick inserted in the center comes out clean
    Leave in pan for 10 minutes; remove from loaf pans and let cool on racks
    Apricot Mini Loaves
    Small loaves of moist tender tasty breakfast bread. Easy and delicious. Perfect for two people.

    1 egg lightly beaten
    6 Tablespoons milk
    5 Tablespoons melted oleo or butter
    1 Tablespoon honey
    1/2 Teaspoon vanilla
    1/2 Teaspon cinnamon (optional)
    1 cup pancake mix, any brand
    l/4 cup each, dried apricots, raisins and chopped pecans

    Mix wet ingredients, mix in pancake mix. Fold in fruit and nuts. Put in two greased or pam sprayed mini loaf pans (4x6 inches) Bake 350 degrees about 30 minutes or until golden brown.
    Ice with sugar and milk icing if you like.
    Broccoli Bread

    1 box chopped broccoli, thawed and drained
    12 ounces cottage cheese
    1 teaspoon salt
    1 large onion, chopped
    4 eggs, beaten
    1/2 cup margarine, softened
    1 box Jiffy corn muffin mix

    Preheat oven to 400 degrees F.
    Add corn muffin mix to other ingredients. Mix well and pour into a greased loaf pan. Bake for 35 to 40 minutes.
    Melt In Your Mouth Strawberry-cream Cheese Biscuits

    A delicious and convenient way to enjoy the flavors of cheesecake in a healthy muffin.

    3 cups Original Bisquick� mix
    2 teaspoons grated orange peel
    3/4 cup orange juice
    3 ounces cream cheese, softened
    2 tablespoons strawberry preserves
    Granulated sugar, if desired

    Heat oven to 450 degrees F. Stir Bisquick mix, orange peel and orange juice until soft dough forms; beat vigorously 30 seconds.
    Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape into a ball; knead 10 times. Roll 1/2 inch thick. Cut with 2 1/2-inch round cutter dipped in Bisquick mix. Place on ungreased cookie sheet.
    Stir together cream cheese and preserves. Spoon about 1 teaspoon cream cheese mixture onto center of each dough circle. Sprinkle with sugar, if desired. Bake 8 to 10 minutes or until golden brown.
    Serve warm.
    Makes 15 biscuits
    Substitution: Use whatever flavor preserves you desire.

    Marmalade Bubble Loaf
    A gooey sweet bread recipe thats easy to make.

    1 (10-count) can refrigerated biscuits
    1/4 cup orange marmalade
    3 tablespoons honey
    2 tablespoons butter
    1/2 cup chopped nuts

    Preheat oven to 375 degrees F. Grease an 8-inch round pan.
    Cut each biscuit into 4 pieces. Place biscuits in prepared pan.
    Combine marmalade, honey and butter. Cook and stir until butter is melted. Spoon over biscuits and sprinkle with nuts. Bake 20 to 25 minutes until golden brown in color.
    Cool 2 minutes; invert on platter and serve.
