    Grandma's Pumpkin S. Hibl, Dickinson, ND

    1 pkg. (48 oz) frozen white dinner roll dough (36 rolls)
    1 c. sugar
    1/2 c. flour
    1 T. ground cinnamon
    Dash salt
    6 c. shredded fresh pumpkin or butternut squash (about 2#)
    2 T. sugar
    1/2 tsp. ground cinnamon

    Lightly grease 15x10x1" baking pan. Set aside. Thaw frozen dough. Let dough rise according to package directions. In a small bowl, stir together 1 cup sugar, flour, 1 T. cinnamon and salt. Set aside.

    On a lightly floured surface, roll each roll into a 5" circle. Spoon about 1 T. pumpkin onto one side. Sprinkle with about 2 tsp. flour mixture. Top with another 1 T. pumpkin. Fold in half, crimping edges to seal. Place on a prepared pan. Repeat with remaining rolls, pumpkin and flour mixture. With a sharp knife, make small slits in top of each.

    Preheat oven to 350 degrees. In a small bowl, stir together 2 T. sugar and 1/2 tsp. cinnamon. Lightly spray roll tops with nonstick cooking spray. Sprinkle with sugar -cinnamon mixture. Cover and let rise in a wam place until doubled (about 30 minutes). Bake for 25-30 minutes or until light golden brown. (Pumpkin juice may seep out of some rolls.) Serve warm or cool. Makes 36.
