    Dreamy White Chocolate-Coconut-Marshmallow Cookies (Recipe by Emiline)

    2 c cake flour
    3/4 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp salt
    6 T unsalted butter, softened
    1/3 c granulated sugar
    3 T milk
    2 tsp vanilla extract
    1 c white chocolate chips
    1 c sweetened flaked coconut
    1 c coarsely chopped marshmallows (freeze for easier slicing)
    1/4 c finely chopped toasted almonds
    3 large egg whites
    1/4 tsp cream of tartar

    Preheat oven to 350 degrees F. Coat a large sheet pan with cooking spray.

    In a medium sized mixing bowl, sift together flour, baking powder, baking soda and salt.

    In a large mixing bowl, using a mixer on medium speed, beat together butter and sugar until creamy, about 1-2 minutes. Beat in milk and vanilla extract until just combined. Reduce mixer speed to low, and beat in flour mixture, until just combined. Stir in white chocolate, coconut, marshmallow and almonds, by hand, until combined (dough will be stiff).

    In a separate clean, medium sized mixing bowl, using a mixer with clean beaters on high speed, beat egg white and cream of tarter until stiff peaks form - about 2-3 minutes. Fold the egg whites into the cookie batter, in three additions, until combined.

    Drop heaping teaspoons of dough onto sheet pan, and bake at 350 degrees F, for 16-18 minutes, or until golden brown around the edges. Cool for 2 minutes before transferring to wire racks to cool completely.

    Makes 16 cookies
