Apple Carrot Cake

1 c whole wheat flour
1 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp allspice
Pinch of cloves
1/2 c sugar
1 c brown sugar, packed
3 eggs
1/2 c canola oil
1/2# carrots, peeled and grated (about 3)
1/2# apples, peeled and grated (about 3 small ones)

Preheat oven to 350 degrees. Grease a large 9x13" pan. You may use a Bundt pan.

In a medium bowl, combine the flours, baking soda and powder and spices. Stir; and set bowl aside.

In a large bowl, place the sugars together; stir with a wooden spoon till completely mixed. Add the 3 eggs; mix well, so they form a glaze. Pour in the oil and mix by hand or use a hand mixer for a few minutes, so they emulsify.

Add the dry flour mixture into the wet sugar mixture and mix well. The batter will be very thick. Once the batter is smooth, brown, with no lumps, fold in the carrots and apples.

Pour the batter into your prepared pan and bake for 30 to 40 minutes, or until the cake springs back lightly to the touch and a toothpick comes out clean.
