    Pumpkin Butterscotch Bread

    3 1/4 c all-purpose flour
    3/4 c quick oats
    2 tsp baking soda
    1/2 tsp baking powder
    1 tsp salt
    3 tsp cinnamon
    1 tsp nutmeg
    1/2 tsp cloves
    3 eggs
    2 c pumpkin puree
    1 1/2 c white sugar
    1 c brown sugar
    1/2 c vegetable oil
    1 c milk
    1 1/2 c butterscotch chips

    Preheat oven to 350 degrees. Grease two 9 x 5" loaf pans. In a large bowl, mix flour, oats, baking soda, baking powder, salt and spices together. In a separate mixing bowl, beat together eggs, pumpkin, sugars, oil and milk. Add dry ingredients to pumpkin mixture; blend well. Stir in butterscotch chips. Fill prepared loaf pans and bake for 45 to 60 minutes, depending on size of pan. Bread is done when toothpick comes out clean. Cool in pans for 10 minutes before removing to cooling rack.
