Spicy Pesto Shrimp

1/4 cup fresh basil, chopped
2 Tbsps. plus 2 tsps. fresh coriander, chopped
1/4 cup oil
2 tsps. sambal oelek, or hot chili sauce
4 cloves garlic, crushed
1 tsp. fresh ginger, grated
2 Tbsps. plus 2 tsps. dry sherry
1 tsp. sesame oil
1 lb. jumbo uncooked shrimp, shelled and deveined, tails intact
2 Tbsps. plus 2 tsps. oil, extra
2 onions, cooked, cut in wedges
11 oz. bean sprouts

Place first 8 ingredients in a blender or food processor and process until smooth. Transfer mixture to a bowl and add shrimp. Heat oil in a heavy nonstick pan or wok over medium-high heat. Add onions and stir-fry 10 minutes, or until just tender. Stir in shrimp mixture and bean sprouts. Stir-fry 10 minutes, or until shrimp are cooked and tender.***
