    Makes 8 servings

    3 c all-purpose flour
    4 tsp baking powder
    2 tsp ground cinnamon
    2 tsp ground ginger
    1/2 tsp freshly grated nutmeg, eyeball it
    1/2 tsp salt
    4 large eggs
    2/3 c packed dark brown sugar
    1 c canned pumpkin puree
    1 1/4 c milk
    1/2 c molasses
    1/2 c (1 stick) melted butter, add'l for the waffle iron
    Optional toppings: syrup, whipped cream, fresh fruits, cinnamon

    1. Preheat waffle iron.

    2. In a large bowl, combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy; beat in pumpkin, milk, molasses and melted butter. Stir the wet ingredients into the dry ones until just moistened. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook waffles. Serve with toppings of choice.
