Caribbean Mashed Sweet Potatoes
1 1/2 pounds sweet potatoes
3 tablespoons olive oil
1/2 cup unflavored soymilk
1 1/2 teaspoons salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1. Preheat the oven to 400 degrees.
2. Clean the potatoes and pierce them in several places with the tines of a fork. Roast them in the oven for 50 to 60 minutes, until very tender, then remove from the oven and let cool.
3. Reduce the oven temperature to 375 degrees. Generously coat a shallow 1-quart baking dish with olive oil.
4. When the potatoes are cool, scoop out the meat and mash it in a large bowl. Add the rest of the ingredients and mix. Spoon the entire mixture into the baking dish and bake for 30 minutes. Serve warm.
