Recipe from: Favorite Brand Name Best-Loved Recipes of All Time cookbook

Apple 'n Walnut Spiced Muffins

1 cup raisins
2 cups all-purpose flour
1 cup oatmeal
2/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
4 to 5 small apples
1 egg
2 egg whites
1/4 cup canola oil or vegetable oil
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Grease muffin tins or spray with nonstick cooking spray.

Pour hot water over raising in small bowl and let sit 10 minutes; drain well and set aside.

Meanwhile, in medium bowl, combine flour, oatmeal, sugar, baking powder, salt, cinnamon, allspice and nutmeg. Stir and toss to combine; set aside.

Peel and core apples. Grate coarsely - you need about 2 generous cups, lightly pressed down. Combine grated apples, egg, egg whites, oil and walnuts; beat to blend. Add to combined dry ingredients and raisins; stir just until blended and moistened - batter will be very stiff. Spoon into prepared muffin tins, filling about three-quarters full. Bake 20 to 25 minutes, or until wooden pick inserted in muffin comes out clean. Cool 5 minutes in pan; remove and serve warm.
