- Lasagne noodles - boil them until they're soft "al dente"
- 2 tbsps. margerine or butter
- 1 clove garlic
- 1 very small onion finely chopped
- about 2, maybe 3 cups of fresh spinach depending on how much spinach you want
- one package of light cream cheese (trust me you'll want the light stuff)
- a small container of cottage cheese
- small can of your favourite tomato sauce (4-5 tbsps worth)
- italian seasoning (fresh or dried)
- two cups grated mozzarella cheese
Directions:
In a sauce pan melt the margerine or butter (keep the stove on medium)
Add the onion and garlic -stir
Once the onion is soft add the spinach one cup at a time -keep stirring
When the first cup of spinach is soft add the next cup
When all the spinach is soft and very bright green add the Cream Cheese
Stir occasionaly until the cream cheese is fairly soft and almost melted
Add the cottage cheese
Stir well
Once all the cheese is soft and melty add the tomato sauce and seasoning
Stir well
Lay one layer of cooked lasagne noodles in an oven safe pan/dish then spoon on one layer if mixture with a handful of grated cheese
Lay more noodles, add more mixture ... until the pan is full (we all know how a lasagne looks when finished!)
The final layer just has cheese on top

Put in a preheated 375 degree oven for about 1/2 hour or unitl the top layer is crisp around the edges. (You may want to uncover for the last 5 minutes)
Cut into pieces, serve and enjoy!
