    I thought this looked yummy, and a little different than the usual turkey and dressing. I'd like to give it a try sometime.


    Swiss Chicken and Artichokes with Dressing
    (from: The Ultimate Southern Living Cookbook)

    6 boneless, skinless chicken breasts
    2 T melted butter
    1 (8 ounce) package cornbread stuffing mix
    3 slices bread, crumbled
    2 eggs, lightly beaten
    3/4 c chopped onion
    1/2 c chopped celery
    1 (14.5) ounce can chicken broth
    1 (14.5 ounce) can artichoke hearts, drained and quartered
    1 can cream of celery soup
    3/4 c dry white wine
    1/2 t dried basil
    1 c sliced fresh mushrooms
    1 (6 ounce) package of swiss cheese slices, cut in half
    1/4 c grated parmesan cheese
    2 T minced fresh parsley

    Brown chicken in butter over medium heat, drain and set aside.

    Combine stuffing mix and next 5 ingredients; spoon into a greased 9x13 pan. Arrange artichoke quarters over dressing mixture; top with chicken.

    Combine soup, wine and basil; pour over chicken. Top with mushrooms. Cover and bake at 350 for 50 minutes.

    Uncover and arrange cheese slices over casserole; sprinkle parmesan cheese and parsley. Bake, uncovered, 10 more minutes. Yield: 6 servings.
